When properly formed, they produce a smooth, sticky foam during the whisking of matcha. Movements with the chasen are made in a W or M shape inside the bowl, helping to fully blend the tea with water and creating a layer of foam on the surface of the tea. The ideal froth is achieved thanks to the flexible hairs of the chasen whisk. The hairs are slightly curved at the bottom, gathered at the top, and finished with a special wooden handle. The chasen features 80 teeth – an ideal number that allows rapid and even aeration of the tea, providing easy control of whisking movements. This results in a stable, fine foam that lasts on the surface of the matcha.
