Dosage: 1,000 grams of mix and 650 - 700 grams of water (ice-cold).
Instructions: Put everything together in a spiral mixer for 10' on slow and 5' on fast (28°C dough exit temperature). Rest for about 15', proof for about 45' at 33°C with 70% relative humidity. Bake with steam at 190 - 210°C, depending on the oven, for about 55'.
