An important advantage is that the pads can be significantly compressed, meaning that a single thickness material is often enough to cover various components such as VRAM, voltage regulators, and other contact surfaces. This is especially practical when the exact height between the cooler and the component is unknown, as the accuracy of 0.5 mm is not critical in this case.
