Historical Information and Plant Morphology: Kozani Saffron (Crocus sativus) is a plant known since antiquity, with references to its use as a medicinal and coloring material by ancient Mediterranean and Middle Eastern civilizations. It is exclusively cultivated in the Kozani Region, from which its name derives. The red stigmas of the flowers are collected and dried to produce the valuable saffron.
