Cold Rosehip Cheesecake with White Chocolate

Ingredients (for a 20 cm pan):

  • Base: 150 g oat cookies, 60 g melted butter
  • Cheesecake Filling: 400 g cream cheese, 200 ml 30% cream, 100 g white chocolate, 4 tablespoons rosehip syrup, 5 g gelatin (or agar) + 2 tablespoons water

Decoration: Fresh or candied rosehips, a few drops of rosehip syrup

The preparation involves crushing the cookie base mixed with butter and chilling it. The chocolate is melted in a water bath and gelatin is dissolved in water. The cream is whipped stiff and combined with the remaining ingredients before being poured over the base. It is chilled until set, and finally decorated with rosehips and syrup.
