Metsoitiko Bread Bakery Mix 20% Premium Concentrate for Traditional Country-Style Bread. METSOVITIKO BREAD 20% is a specialized concentrate designed for bakeries that want to offer a country-style bread with consistent quality and a rich aromatic profile. With a usage rate of just 20%, it blends ideally with flour, simplifying the production process without taking away from the artisan’s identity.

It contains selected ingredients and dry sourdoughs that faithfully reproduce the deep, slightly tangy taste and aroma of traditional wood-fired oven bread. The final product stands out for its long shelf life, crumb texture, and its country-style, rustic appearance.

  • Authentic Sourdough Aroma: Gives the bread the deep flavor and aroma of long fermentation.

Dosage: For 2,000 grams of mix, 8,000 grams of 70% strong flour, 6,000 - 6,500 grams of water (ice-cold) and 200 grams of yeast. Instructions: Put everything together in the spiral mixer for 10 minutes on slow speed and 5 minutes on fast speed. Rest for about 15 minutes. Proof for about 45 minutes at 33°C with 70% relative humidity. Bake with steam at 190°C - 210°C for about 55 minutes.

Storage: In a shady and cool place.
