Dosage: For 5,000 grams of mix, 5,000 grams of 70% strong flour, 6,000 - 6,500 grams of water (ice-cold) and 200 grams of yeast.
Instructions: Knead everything together in the mixer for 10 minutes at slow speed and 5 minutes at fast speed. Rest for about 15 minutes. Proof for 45 minutes at 33°C with 70% relative humidity. Bake with steam at 190°C - 210°C for about 55 minutes.
Storage: Store in a shaded and cool place.
