Extra virgin olive oil comes from a millenary olive grove with 4,000 olive trees, aged up to 800 years. The Monastery's olive mill is modern and certified, continuing the tradition of the old stone-built olive mill. In the olive grove, many self-rooted olive trees are cultivated with thousands of wild olive roots and unique varieties. The modern innovative processes include the composting of all olive mill residues, without the use of chemical fertilizers.
