Trachanas is a pasta made from flour and milk and has a grainy and irregular shape. It comes in various varieties, sour and sweet, thick and thin. Sour trachanas is made from sour cow's or sheep's or goat's milk, which has soured, or from yogurt together with wheat or broken wheat flour or semolina or a mixture of wheat and semolina, taking on the corresponding color. Sweet trachanas, on the other hand, is made from fresh milk that has not soured, which is why it is sweeter. This is a product made from whole grain.
