It is a type of pasta that we have in various parts of Greece and is also called kouskous. We have all seen it as round balls, that is, these microscopic semolina balls that we have certainly tasted in some dish. It belongs to the so-called oriental pasta, which boils in a little and measured water, is not drained, and is served with its broth. It is usually used with mussels and tomato sauce or as a side pasta in many dishes, and it is also a main dish in the kitchens of many other Mediterranean countries. In fact, in various Middle Eastern countries, kouskous is the main dish in the family meal on Fridays. In modern Greek cuisine, kouskous was not very fashionable until a few years ago when it entered restaurants as tabbouleh. This is a product made from whole grain.
