  • This book is probably aimed at professionals. Two-thirds of the content, beyond the historical overview of breads, consists of various clarifications about flours, baking techniques, etc. The book has quite a few recipes but 80% of them require natural sourdough in addition to fresh yeast. The author provides many useful details about everything you need to make sourdough, such as temperature measurement, etc. It's just that, as a simple housewife, I don't know to what extent I will actually go through the process of buying thermometers to measure the temperature of either the dough or the sourdough every so often. Very good book, but perhaps not for those looking for quick and easy recipes.
