Bamboo: Ideal for quick chopping. Absorbs less water than wood. It is a harder material, so in the long run it may dull very sensitive/professional knives more quickly. Not dishwasher safe
Wooden: It protects knives, as wood absorbs the impact of the blade without dulling it. It is ideal for dry foods or roasted meats. Hand wash only.
Plastic: It is a non-porous material. Microbes (such as salmonella) from raw meat cannot penetrate its interior, as they can with wood. It is dishwasher safe.
