Many years have passed since I started writing cookbooks. I don't even remember how it all began... It was my friends who pushed me, and there was also an inner need of my own...

Everything started in the early '90s. The first book was a collective effort. A friend did the graphics, a friend typeset it, a friend created the vignettes, the great Mitropoulos designed the cover, and Dimitris Maronitis wrote the foreword; a jewel of a book, fresh and aromatic like new wine.

Many years have passed since then. Freshness is replaced by maturity. The demands increase, experiences multiply, and you see things in a different way.

Thus, the decision for a new book with recipes inspired by the '90s takes shape. This time much juicier, much more appetizing, as it is filled with photographs. This is how the appetite "opens"... You see, you imagine, you smell the air and step into the kitchen to create wonders.
