Medium beans are a good "ally" for a healthy heart. Thanks to their high content of soluble dietary fibers, they can significantly reduce cholesterol and triglyceride levels. With a low glycemic index, they contain an excellent mix of complex carbohydrates and proteins, slowing down the digestion process and helping maintain low blood glucose levels.
RECIPE for medium beans with vegetables
- 500 g medium white beans ALL BIO
- 1 finely chopped onion
- 2 celery stalks
- 1 carrot sliced
- 100 g chopped cabbage
- 2 lemons (juice and zest)
- 200 g wild asparagus
- 6 tablespoons olive oil
- 1.5 liters vegetable broth
- coarse salt from Messolonghi
- freshly ground pepper
Instructions: After soaking the beans from the previous day, boil them with the other ingredients (excluding the wild asparagus) until they thicken. Ten minutes before the end of cooking, add the wild asparagus. We can also use broccoli or cauliflower instead of wild asparagus and add more lemon if we like.
