The oil derived from sesame is called sesame oil and has the highest content of antioxidant substances among edible oils. It contains lignans, which include sesamin, with antioxidant and anticancer properties. The phytosterols in sesame are associated with reduced cholesterol levels in the blood. Sesame is also a good source of the amino acid methionine, which helps with the absorption of other amino acids.
