This review is about the size: 26 cm

Quite a good pan. I am generally satisfied, it does become more non-stick with use indeed, but it requires persistence and patience. I don't think it will ever become as non-stick as a coated one, but what you lose you gain in durability. You can scrape it, use metal spatulas, brush it and nothing will happen to it. It loses one star because it can't go in the oven, due to a coating on the handle, which is unnecessary, it could have been oven-safe, check out the corresponding series from the company that doesn't have the coating.

First of all, I don't know why it is in the cast iron category since it is carbon steel. The epoxy resin on its handle does not allow it to be used in the oven at 200 degrees for more than 10 minutes. So, it's a no-go for the oven...

    Instructions for use and maintenance
Before first use, wash your cookware with warm soapy water, using a soft sponge. Rinse with plenty of water and dry carefully. Suitable for use on all types of stoves. All products with a stainless steel handle are suitable for use in the oven. Usage precautions for traditional oven for other products:
    - Do not use the grill function.
    - The temperature should not exceed 200°C (Thermostat 7) for more than 10 minutes (Flash Four).
Adjust the size of the stove to the diameter of the bottom of the cookware. Special recommendations for induction, to maintain the lifespan of your cookware:
    - Gradually increase the temperature.
    - Avoid using the booster.
    - Do not overheat the cookware if it is empty.
Be careful when handling after long cooking or baking in the oven (risk of burns). With use, the stainless steel cookware changes: its color becomes blue or black, this reaction is normal. Do not leave food inside the cookware. Do not store the cookware in a humid place. Lightly oil the pan: pour 1 or 2 drops of oil on an absorbent paper and gently rub the pan, inside and outside (e.g. with olive oil). This creates a layer that protects the cookware from oxidation. If the paper turns brown, it is normal: it is due to the preparation process, it does not mean that it requires a new cleaning. Cooking acidic foods (tomatoes, white wine, lemon, etc.) may cause white spots to appear on the surface. Maintain with a sponge and warm water. Deglaze if there are any stuck residues or soak the cookware for a few minutes and then scrape it off. Do not place the product in the dishwasher.
