Pine honey is not very sweet and is produced in northern Evia. It constitutes about 65% of the total honey production in Greece. Due to its low sugar concentration, it has a low sweet taste.
Pine honey is considered high in nutritional value, as indicated by its high ash content. This is mainly due to the large number of different substances present in its composition.
- Minerals: calcium, magnesium, zinc, iron, copper, etc.
- Aroma: unique, similar to the scent of iodine.
- Crystallization: occurs at a rather slow rate due to its low glucose content.
- Fluidity: pure pine honeys remain fluid for more than a year and a half.
