Description

Pine honey is not very sweet. It is produced in northern Evia and constitutes about 65% of the total honey production in Greece. Due to its low sugar concentration, it is not particularly sweet.

 

Pine honey is considered to be honey of high nutritional value, as indicated by its high ash content, primarily due to the large number of different substances in its composition. Among these substances, the following prevail:

  • Minerals
  • Trace elements (calcium, magnesium, zinc, iron, copper, etc.)

Its aroma is distinctive, and some compare it to the scent of iodine. The crystallization of pine honey occurs at a very slow rate, as its natural glucose content is low. Pure pine honeys remain liquid, without crystallizing, for more than a year and a half.
