Fir honey is one of the rarest honeys in the world. It has a taste reminiscent of vanilla and a pearly-caramel color, with a creamy texture. Bees compose it from honeydew produced by the insect Physokermes Hemicryphus, exclusively in the fir forests of the Peloponnese, particularly in Mainalo and Parnon. It is a honey that does not come out every year due to the many factors that must come together. Its extraction is extremely difficult and costly because it requires the destruction of the honeycombs. For these reasons, its production is very small and periodic over the years. It is one of the best categories of honey, rich in trace elements (potassium, magnesium, phosphorus).
